One Pot Keto Asian Chicken

For everyday lunches and dinners, I like to have one-pot recipes handy. I generally start with the meat portion of the dish and add vegetables.

This recipe is based around chicken drumsticks and I added the broccoli florets and asparagus in because I like vegetables to complete the meal.

Asparagus is a super food.

Ingredients

450g of chicken drumsticks. Thighs and wings could also be used.

1-378 mL can of coconut oil

1/2 bunch fresh cilantro, chopped

2-4 g fresh grated ginger

1/8 cup fish sauce

1 Tbsp sesame sauce

1 tsp soy sauce

1 tsp lime juice

1 tsp salt

1 tsp pepper

2 tsp erythritol or sugar-free sweetener of your choice.

1 crown of broccoli, chopped

1/2-1 bunch asparagus, chopped. Remove the rough bottom parts and discard.

Process

In a pot, heat the coconut milk and add in fish sauce, sesame sauce, soy, lime juice sweetener, salt, pepper. Mix thoroughly

Add in chopped cilantro and ginger.

Place meat in baking pan and cover with the sauce you just made.

Add in broccoli florets and asparagus.

Marinate over night at room temperature or as long as possible.

Once you’re done marinating, preheat oven to 390 F.

Bake uncovered for 45-55 minutes. You know you’re done when the meat is tender and basically falling off the bone.

Serve & enjoy this simple, nutritious one-pot meal !
