One Pot Chicken Thighs

This recipe is simple & delicious. Perfect for those just starting out in the kitchen.

Ingredients

1 lb (220 g) chicken thighs

1 head broccoli

3 strips of bacon

1tsp dried thyme

1tsp dried basil

1 Tbsp apple cider vinegar

salt & pepper to taste ( I recommend approx. 1 tsp each)

Procedure

If possible, marinate the thighs in the rub for several hours or overnight. This recipe will also work if you don’t marinate.

Remove chicken from packaging and rinse with water. Pat dry and place into baking dish.

Drizzle with the vinegar and rub all over the meat.

Now rub the dry seasonings all over the chicken thighs.

Cover with cloth and set aside on the counter. If the weather is hot, you can marinate overnight in the fridge.

When you’re ready to bake, preheat oven 385 F. Place the dish with the chicken thighs into the oven.

Rinse the broccoli and cut florets into bite sized pieces. After 25 minutes of backing, place broccoli into dish, on top of the chicken.

Top with bacon strips and return to the oven for another 20 minutes.

I bake this dish uncovered so it turns out crispier.

Once it is baked, remove from oven and let cool before serving.
