Keto Shepherd’s Pie
This is a simple and tasty savoury recipe. In all honesty, it doesn’t really hold its shape once served and turns into something risotto like but it still tastes great and has nice texture.
Ingredients:
1lb ground beef
1 head cauliflower
1 leek
1 medium-sized onion
1/3 bunch parsley
1 large carrot
2 tbsp italian seasoning
1 tsp salt
2 tbsp ghee
1/4 cup avocado oil
Procedure
Boil a pot of water. Cut the cauliflower into pieces about the size of half your fist. Steam the cauliflower.
Heat another pan with the avocado oil. Dice the onion and leek and saute in the avocado oil.
Dice the carrot and add it into the pot with the onions.
Add in the ground beef and mix.
Add italian seasoning.
In another pan, melt the ghee and add in the steamed cauliflower florets.
Finely chop the fresh parsley and mix it into the cauliflower.
Mix thoroughly and mash the cauliflower with a potato masher until it resembles mashed potatoes.
Add the salt. Mix thoroughly.
Preheat the oven to 350 F.
Take a baking dish that is approximately 9” x 9”. Spread the ground beef and vegetable mixture on the bottom.
Top with the mashed cauliflower.
Bake for 30 minutes. Let cool and serve.
