Keto Chicken Coconut Mustard Hash
This is a yummy and colourful chicken recipe. It contains chicken but no curry!
Secret Ingredients: hazelnuts & pepper !
Ingredients
600 g chicken thighs, diced
1 diced white onion
1 carrot shredded
1/2-1 cup hazelnuts, ground
1/2 cup of ghee or coconut oil
1/4 cup chicken stock
4 Tbsp prepared mustard
1/2 cup unsweetened coconut flkaes
1/2 tsp pepper
1/2 tsp salt
Process
I made the sauce first:
Heat the ghee on medium heat until melted.
Stir in the chicken stock and mustard
Keep stirring, add in the unsweetened coconut flakes, pepper and salt. This recipe is a great opportunity to use any exotic peppers you may have !
Then I prepared the chicken:
Heat coconut oil until melted in another sauce pan
Add in the diced chicken thighs. You could use chicken breasts but I like this recipe with thighs because they are more moist.
add in the onion and carrot. Stir and cook for 5 minutes
Add in the sauce. Stir.
Add in the hazelnuts. Stir.
Cook uncovered until chicken is tender.
Serve on a bed of salad greens or with steamed broccoli !
