Keto Buns !

This recipe was my first foray into keto bread and pasta substitutes and it was a success! I find this recipe really easy; it’s not finicky at all and works pretty well, so I’ll share it.

It makes little buns that are soft. My child even ate one with butter and jam and found it acceptable as “bun”, so this is a bench mark.

This recipe is inspired by one that I found on dietdoctor. https://www.dietdoctor.com/recipes/the-keto-bread but naturally, I added a superfood twist!

Ingredients:

5 Tbsp ground psyllium husk powder

3/4 cup coconut flour

2 tsp baking powder

1 tsp sea salt

1 cup water

2 tsp apple cider vinegar

3 egg whites

2 Tbsp hemps seeds or any other seed of your choice. You can grind the seeds, if you would like.

Process

Preheat your oven to 350 degrees F.

Mix the dry ingredients together thoroughly.

Boil the water and let cool a little bit.

Beat the egg whites and add in apple cider vinegar and water.

Mix dry and wet ingredients.

Roll into balls a little smaller than tennis balls. Flatten a bit.

Place on cookie sheet or pan lined with wax paper and bake for 50 minutes.

Remove from oven and enjoy !
