Golden Coconut Butter

I created this savoury Superfood Coconut Butter recipe for when you want a buttery condiment to your meal but don’t want to have dairy. This butter has a totally different nutritional profile to dairy butter. As many of the recipes on In Key Wellness, it is loaded with super foods !

Whether you choose to eat dairy is up to you. The kind of dairy that you choose to eat is important. It’s best to choose grass fed or bio-dynamically raised products that support your local farmers.

Many adults do not digest dairy properly, so eating only fermented dairy products, which are probiotic may be a better option for you. You can also make dairy-free probiotic foods, but that’s another recipe…

Personally, I eat some dairy when the weather is cold outside. I tend to choose goat milk products. Did you know that most of the world does not consume cows’ milk? Instead, they raise and drink goat, sheep and yak milk. Cows are large and the proteins in their fat and meat can be difficult for humans to absorb. Goats are much more human-sized and thus their tissues assimilate better.

The way you combine foods can be important for optimizing digestion. Dairy and meat are broken down by different enzymes, which work best at different stomach pH. It is best to eat meat and dairy at different courses, at least 15 minutes a part.

Ingredients

200 g coconut oil

10 g ground hemp hearts

10 g ground chia

10 g turmeri powder

1 pinch sea salt

1 pinch garlic powder.

Procedure

Melt the coconut oil in a pan on a very low heat.

Add in hemp hearts, chia & turmeric powder one by one, stirring. Mix thoroughly.

Add sea salt and garlic powder.

Line a container with wax paper and pour in the butter mixture.

Let harden in refrigerator or freezer. The solids do settle to the bottom.

Once it’s hardened, I divide it into two. I cut half the serving into squares and put them in a small dish which I store in the refrigerator. I store the rest in the freezer until I need it. Then I thaw, cut into squares and store in the fridge. It stores in the freezer for up to 90 days.
