Golden Cauliflower Keto Rice

Cauliflower is a great low-carb vegetable that can be used as a rice substitute. This dish is a great side for meat dishes.

You can choose to chop the cauliflower quite finely, so that it truly resembles rice, or you can leave the piece a bit larger and make a savoury side.

Ingredients

1 head cauliflower

2 tbsp coconut oil or avocado oil

1 tsp soy sauce

1Tbsp sesame seed oil

2-3 cloves of garlic, diced

1/4 tsp fresh ground black pepper

1 Tbsp sesame seeds ground

2 Tbsp turmeric

1 tsp cilantro, dried

Process

Wash the cauliflower and dice into small pieces. Set aside.

In a large pan, melt the coconut oil over medium heat. Once the oil is melted, you can use low heat.

Saute the diced garlic for 3 minutes until it is golden. Do not let it brown.

Add in the soy sauce, sesame seed oil, ground sesame seeds, turmeric powder, cilantro & pepper. Mix thoroughly.

Now add in the cauliflower pieces, mix and cook uncovered on stove top for 20 minutes.

After 20 minutes, the cauliflower will be quite soft and a bit crispy.

Top with salt, pepper and butter to taste.

Instead of butter, I used Golden Superfood Butter.
