Golden Cauliflower & Egg Scramble
Cauliflower is a great low-carb substitute to rice. You can chop the cauliflower really fine to make it really rice-like, or use larger pieces and enjoy the texture.
This recipe is an add-on the Golden Cauliflower Rice , which is very versatile The cauliflower rice is very versatile. You can make the entire recipe and use the left overs for dinner the next day. It stores well in the fridge for up to 3 days.
Here, I pair it with eggs to make to make a smart lunch dish. For three scrambled eggs, which is one large breakfast lunch portion, I use 1/3 of the above recipe.
Ingredients:

3 eggs
Procedure:
Make the Golden Cauliflower Rice and set aside.
In a pan, heat oil and scramble the three eggs.
Add in 1/3 the cauliflower rice dish and stir thoroughly.
This simple recipe is now ready to serve. Enjoy with greens or a side of bacon. 🥓
