Asian Egg & Vegetable Scramble
This dish makes a great quick lunch that is filling and nutritious.
I created it out of ingredients I had around the house.
The garlic, spring onion and sesame seed oil give it an asian flavour profile. 🍱
Ingredients
1 Tbsp ghee
1Tbsp coconut oil
1 tsp sesame oil
1/2 onion, diced
1 shallot, diced
3 cloves of garlic, diced
1-2 bunches spring onions, chopped into small pieces
1 heart romaine lettuce, chopped
1-2 cups fresh spring mix
4 egg, scrambled
Process
You will need two sauce pans for this recipe.
In one pan, melt the ghee on low heat.
Add in the onions, spring onions, shallots & garlic and saute.
Scramble in the eggs.
Add in sesame oil
In a second pan, melt the coconut oil on low heat.
Then add in romaine hearts & spring mix. Stir. Cook gently until tender, about 3 minutes.
Stir greens into eggs. Mix, serve & enjoy this simple, nutritious and vegetarian keto. Makes a great lunch !
